Competent and Experienced Chef required to support Thorney How in Grasmere Lake District for the 2017 season.
Be part of our small team, enthusiasm and a sense of humour essential. Our capacity is 42 overnight guests. We cater for individuals, groups and parties including full board if requested. The chef will take a lead role in developing the seasons menus and managing all aspects of the kitchen.

Thorney How is developing a kitchen garden and we want to increase the use of our produce in the menu so a willingness to help in the garden, collect eggs, talk to the sheep as well as serve at the bar and basically turn a hand to other tasks at less busy times would be ideal.

We are anything but boring and Thorney How is in a beautiful part of the world.

Accommodation: There may be shared accommodation available with this post.
Start date: March, as soon as possible.

Seasonal General Assistant
Hours per week: 40 FT or P/T hours to suit.

Experience not essential, but great if you have it. Duties include housekeeping, bar work and service, front of house and probably some gardening Must be computer literate, hardworking and good with cats and other animals.

Accommodation: There may be shared accommodation available with this post for FT employees only.
Start date: March, as soon as possible.

A busy rural accommodation provider with bar and catering facilities in South Lakeland with up to 42 beds in 11 rooms. We offer guest house B&B and bunkhouse type accommodation, food and drink for events, parties, celebrations as well as for individual travellers, walkers and groups. We need an enthusiastic energetic team players with the ability to perform consistently well with a cheerful approach. All staff may at some time be required to undertake general duties including front of house, service, cleaning, some basic catering and bar work.

Situated off the beaten track directly on the Coast to Coast pathway and under Helm Crag in Grasmere. Thorney How is a listed building sitting in 2.25 acres of grounds, so you may even find yourself working in the garden. Must like cats, and of course people, we also have hens, ducks and sheep! It is useful to have an interest in the outdoors and to have a good sense of humour.

These position may be extended for up to a further year.

Adam Tyrer
Adam joins us from New Zealand.

“I have lived in many areas in New Zealand and I get my interest in food and cooking from my mum. We have always lived on lifestyle blocks (small holdings) and raised our own stock and grown vegetables at home, so I have always had an interest in using the ingredients to their full potential. I left school at 17 as I knew then that education was not the way forward for me, all I
have ever wanted is to be a chef and be the best I can be at it.”

Food is our top priority at Thorney how.

From the home grown summer fruits, salads and seasonal vegetables, to ensuring that all our suppliers are also locally sourcing their own produce.

If you’re staying with us, or just fancy dropping in for a bite to eat, we offer a distinctive menu of simple, wholesome, freshly prepared food. We’re just a short walk from the centre of Grasmere village and popular walks: Easedale Tarn & Helm Crag.

All our main course evening meals are priced £10, or just £13 when combining them with one of our tasty desserts. Evening meals are generally served 6.30pm to 7.30pm and should be pre-ordered.

We’re keen to promote locally sourced foods and all our ingredients are freshly prepared by our in house Chef, Stephen.

In Stephen’s own words:

“The two most important things about cooking great food are the simplest, the ingredients and the freshness. So, as a chef, to have these two things available in abundance makes for a wonderful working environment, and at Thorney How I’ve found one of the best places to work. To cook in a kitchen which overlooks its own vegetable and herb garden is an amazing privilege and one that not many chefs can boast about.”

We try and utilise some element of our freshly grown garden produce in all our meals depending on availability and the time of year. Our freshly grown produce ranges from herbs, to summer fruits, salads and seasonal veg such as broad beans and courgettes.

Stephen’s early career was as a student at Paul Heathcotes School of Excellence, under the guidance of Michelin starred Chef Andrew Barnes. Here the two key rules of ingredients and freshness were first imparted. Stephen was taught to ‘let the ingredients talk for themselves’ and that a Chefs’ job was to emphasise these flavours and not to stifle them with pretentiousness.

After Training in Manchester, Stephen and his wife Jennifer decided to move to Lake District and after many years working for hotels decided to open their own guesthouse in Windermere.

We’ve been very fortunate to recruit Stephen to join us in the evenings after cooking his own award winning breakfasts at the Archway.

Together we share a like minded approach to quality and the use of the freshest local produce. This is why we all like working at Thorney How and why so many people have been praising our food:

Sample menu options

Steak & Ale Pie
Cumbrian chuck steak slow braised in local beer, finished with thyme and a little brown sugar. Thickened with butter and flour to give a rich and shiny gravy. Served with roasted new potatoes and fresh seasonal veg.
Pork Leek & Cheese Pie
Generous chunks of Cumbrian pork leg, slow cooked for hours, finished with white sauce, leeks and lashings of cheese and a smidgen of Cumberland mustard. Served with roasted new potatoes and fresh seasonal veg.
Cumberland Sausage
Traditional locally produced Cumberland sausage rings, finished in a rich onion gravy. Served with creamy mashed potato and fresh seasonal veg.
Goat’s Cheese Parcel
Local goats cheese, homemade red onion marmalade and roasted red peppers mixed together. Then rolled in filo pastry, buttered and cooked till crispy on the outside and melting in the middle. Served with fresh salad, a fresh basil drizzle and extra red onion marmelade.

Thorney How team member to raise money for charity.

One of the members of the Thorney How team will be headed out on hills, slightly further afield than usual in aid of Cyclists Fighting Cancer and Lease of Life.

At the end of this month, Emma Nuttall, our General Assistant will be taking the weekend off from checking in customers, to go check in at a hostel in Fort William for the night, before climbing to the peak of Ben Nevis, the tallest mountain in Britain.

Lease of Life aims to provide access to sport for any child suffering or recovering from cancer and has pledged all funds raised by their team to the Cyclists Fighting Cancer Charity, whose purpose it is to provide bikes, adapted tricycles and equipment to children and young people whose lives have been affected by cancer.

As many of our customers will understand, bikes provide a fun and practical way to regain lost strength, fitness and confidence.

With three weeks to get in shape, Emma will be sacrificing the comfort of staying inside on the couch next to the fire to do a number of mountain walks and runs around the Lake District.

So far this week, since starting her training, she has already encountered typical terrible weather, endured blisters and to top it off has been defecated on by one of the local farmer’s cows.

Thorney How will be the first to make a donation of £10.00 and is proud to be supporting Emma and the Lease for Life/Cyclists against Cancer campaign.
